Honey Jerk Salmon Bites and Shrimp

Tender, flaky salmon and juicy jumbo shrimp are seasoned with a blend of smoky spices, Debbie's Caribbean Soul Spice, and a touch of jerk seasoning before being coated in a rich, sweet-and-spicy honey pineapple glaze infused with fresh garlic and bright lemon.

Ingredients
  

  • 1 lb salmon filets cut into bite size pieces
  • 1 lb extra-large or jumbo shrimp (peeled and deveined
  • 1 lemon
  • 1 tsp salt black pepper, smoked paprika, onion powder, garlic powder, old bay seasoning
  • ½ tsp Debbies Caribbean soul spice lemon pepper seasoning,
  • 2 tsp spicy jerk marinade
  • 3 garlic loves minced
  • 1/3 cup honey
  • 1/3 cup pineapple juice
  • 1 tbsp honey
  • 2 tbsp butter
  • 3 tbsp avocado oil

Method
 

  1. Drizzle juice from half the lemon over shrimp and salmon, let sit for 3 minutes, then rinse. Pat dry, season with all the dry seasonings. Heat avocado oil, brown salmon pieces for 3 minutes on each side, set aside, then brown shrimp for 3 minutes on each side as well and set aside, in the same skillet add jerk marinade and minced garlic, stir well to combine and cook for 1 minute. Add the pineapple juice and honey, and juice from remaining ½ of lemon stir well to combine. And cook for 5 minutes or until you get desired thickness, add the shrimp and stir well, add the salmon and toss gently.

  3. You can bake the shrimp and the salmon on 425 for 6-8 minutes, or Air fry on 400 for 6-7 minutes.
