Sweet Potato Cornbread

This Sweet Potato Cornbread brings comforting flavor and a tropical touch to a homemade favorite. Grated fresh sweet potato, cornmeal, and coconut milk create a moist, tender bake, while ginger, cinnamon, nutmeg, and vanilla add warm spice. Ingredients
  

  • 1 cup all purpose flour
  • 2 tp baking powder
  • ½ tsp baking soda
  • ½ cup cornmeal
  • Pinch of salt
  • 1 cup grated uncooked sweet potato
  • 1 cup sugar 1/2 brown n ½ white
  • ½ tsp grated fresh ginger or ground organic
  • ½ tsp ground cinnamon ground nutmeg
  • 1 can or 1 cup coconut milk
  • 2 eggs
  • 1/3 cup oil I use either coconut or avocado
  • 2 tsp vanilla extract
  • 2 tbsp butter
  • 3 tbsp honey
  • 4 tbsp coconut cream optional

Method
 

  1. Preheat oven to 350
  2. In a bowl combine coconut milk, eggs, oil and vanilla extract, whisk well to combine.
  3. In a large bowl sift flour, and cornmeal, add sugar, baking soda, baking powder, salt, cinnamon powder, and if using ground ginger and mix well to combine. Add the liquid mixture and mix well to combine, then add sweet potato and mix well to combine. Butter your baking dish and bake uncovered for 1 hour. Remove from oven. Melt butter and add honey and coconut cream ( if using coconut cream) mix well to combine, heat on low for 2 minutes, drizzle over the finish sweet potato corn bread.
