- 2 cups strawberries thawed (include their juices)
- 1/3 to 1/2 cup coconut sugar depending on desired sweetness
- 1 to 2 teaspoons freshly grated ginger
- 1/4 teaspoon ground cinnamon
- 1 tablespoon lemon juice strongly recommended
- Small pinch of salt
- 1/8 teaspoon xanthan gum only if needed
- Place the strawberries coconut sugar, ginger, cinnamon, lemon juice and salt in a small saucepan.
- Bring to a gentle simmer over medium heat stirring frequently.
- Mash the strawberries with a potato masher or wooden spoon.
- Simmer uncovered for 15 to 25 minutes stirring frequently, until the mixture reduces and begins to coat the spoon.
- Test the jam by placing a small spoonful on a cold plate. Let it sit for 1 minute then tilt the plate. If it moves slowly, it is ready. It will thicken further as it cools.
- If it remains too thin thoroughly mix 1/8 teaspoon xanthan gum with 1 teaspoon coconut sugar. Sprinkle it gradually over the simmering jam while whisking continuously.
- Cook for 1 additional minute then remove from the heat. Do not add more xanthan gum until the jam has cooled; too much can create a gummy texture.
- Transfer to a clean jar. Allow it to cool cover and refrigerate.
- Yield and Storage
- Yield: Approximately 1 to 1 1/4 cups.
- Storage: Keep refrigerated and use within approximately 2 weeks or freeze for longer storage. This recipe is not intended for shelf-stable canning.
