Ingredients
  

  • 3 lbs drumsticks
  • 1 tsp onion powder garlic powder, white pepper, smoked paprika,
  • 1 / tsp salt
  • 1 /2 tsp Debbies Caribbean Soul spice
  • ¼ tsp ground ginger
  • 1/8 cup and 2 tbsp low sodium soy sauce
  • 2 tbsp dark soy sauce
  • 2 tbsp rice wine vinegar
  • 1/3 cup honey
  • 1 scotch bonnet pepper finely diced seeded or without
  • Pinch of fresh ginger grated
  • 4 cloves garlic minced
  • 2 green onions washed and chopped in large pieces
  • 5 tbsp olive oil divided 4 n1
  • 2 tbsp butter
  • 1/8 cup water

Method
 

  1. Wash and clean drumsticks with water and white vinegar of lemon juice, pat dry. Drizzle 1 tbsp olive oil onto drumsticks and massage well to coat each pieces. Seasoned with all the dry ingredients, including the ground ginger, also 2 tbsp low sodium soy sauce , massage well . Cover and marinade at least 30 minutes. Heat remaining olive oil on medium heat, brown drumsticks for 3 minutes on each side. Set them aside, in the same skillet add the butter, minced garlic and grated ginger, and diced scotch bonnet pepper, stir well to combine cook for 1 minute stirring constantly. Add the remaining soy sauce, rice wine vinegar and honey, stir well to combine, bring to a low oil and simmer for 5 minutes, add the chicken drumsticks in and cover and cook on low simmer for 25 minutes.
