Caribbean Pepper Chicken

Ingredients
  

  • 2 boneless skinless chicken breasts wash and pat dry ( cut in desired sizes and shapes)
  • ½ of tri colour bell peppers sliced
  • 1 white onion sliced
  • 4 garlic cloves minced
  • 1 inch ginger finely chopped
  • 1 tsp salt black pepper , onion powder, garlic powder smoked paprika, sazon,
  • ½ tsp Debbies Caribbean soul spice
  • 1 tsp Cayenne pepper or red pepper flakes.
  • 2 tbsp water
  • 1 tbs light low sodium soy sauce
  • 2 tbsp dark soy sauce
  • 1/2 tsp sugar
  • 1 tsp cornstarch
  • 3-4 tbsp avocado oil

Method
 

  1. In a bowl combine all the seasoning ingredients and mix well. Season diced chicken pieces with half of the seasoning mixture, cover and marinade at least 30 minutes. Heat oil on medium heat, brown chicken 3 minutes on each side, do this in two batches, In the meantime in a bowl combine light and dark soy sauce with water sugar and cornstarch and whisk well. set brown chicken aside and in the same skillet add the onion, garlic, ginger and bell pepper and sauté for 2 minutes , add the remaining dry seasoning mix as well, and stir well to combine, add the liquid and mix well to combine add the brown chicken pieces and mix well to combine, cook for 3 minutes stirring constantly.
