Oven Baked Jerk Chicken with a sweet and Sour Sauce

This Oven-Baked Jerk Chicken with Sweet and Sour Pineapple Sauce is a bold and flavorful Caribbean-inspired dinner the whole family will enjoy. Bone-in chicken thighs are seasoned with spicy jerk marinade, Debbie’s Caribbean Soul Spice, hoisin sauce, oyster sauce, and warm spices, then baked until tender and juicy.

Ingredients
  

  • 3 ½ lbs. bone in skin on chicken thighs
  • 2 ½ tbsp spicy jerk marinade
  • 1 ½ tsp salt black pepper, onion powder, garlic powder, sazon, all- purpose seasoning, (divided 1 n ½)
  • ½ tsp. Debbies Caribbean Soul Spice
  • 2 tsp liquid smoke
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 cup fresh diced pineapples
  • 1 small onion diced
  • ½ red and green bell peppers diced
  • 3 cloves garlic minced
  • 1 pinch ginger freshly grated
  • ½ cup pineapple juice
  • 4 tbsp honey
  • 2 tbsp brown sugar or my preference organic coconut sugar
  • Juice of 1 lemon
  • 1 tbsp white wine vinegar or apple cider vinegar
  • ½ cup ketchup
  • 1/8 cup low sodium chicken broth
  • 2 tbsp butter
  • 2 tsp olive oil

Method
 

  1. In a bowl and2 tbsp jerk marinade and 1 tsp of all dry seasonings, with hoisin sauce, and oyster sauce, mix well to combine and make a paste. Clean chicken by removing excess skin and fat, wash in water with white vinegar. Pat dry, then season chicken, be sure to go under the skin, cover and marinade over night or at least 1 hour.
  2. Preheat oven to3 375. Pour chicken broth in baking dish, layer chicken pieces in baking dish , cover and bake for 50 minutes covered
  3. In the meantime in a sauce pan add olive oil and butter, when butter melts, add onions, and bell pepper, sauté for 2 minutes, add garlic and ginger and stir well to combine, cook for 2 minutes, add pineapple chunks, and sugar, mix well to combine, add honey, lemon juice , apple cider vinegar, add the ketchup. Cook for 8 minutes stirring constantly.
  4. Remove bake chicken and pour off the juices. ( I like to cool and freeze to use in a gravy or for a sauce). Pour the sauce over chicken.
