Jamaican Style Steam Cabbage

This Jamaican-Style Steamed Cabbage is a colorful, flavorful side dish made with tender cabbage, carrots, sweet corn, tomatoes, bell peppers, and fresh herbs. Everything is gently sautéed and steamed with aromatic garlic, thyme, green onions, warm seasonings, and a touch of ground Scotch bonnet pepper for authentic Caribbean flavor.

Ingredients
  

  • 1 small cabbage cut into desired sizes
  • 3 medium carrots peeled and cut into desired sizes
  • 1 cup frozen corn thawed or mixed vegetables)
  • 3 cloves garlic minced
  • 1 onion sliced
  • 2 roma tomatoes diced
  • ½ red and green bell pepper sliced
  • 4 sprigs fresh thyme
  • 2 green onions washed, lightly smashed , cut into 3
  • 1 tsp salt black pepper smoked paprika,
  • ½ tsp all- purpose seasoning.
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 4 tbsp water or vegetable broth (divided 2 n 2)
  • ½ tsp ground scotch bonnet pepper

Method
 

  1. Wash and drain cabbage, heat olive oil on medium heat, add onions, tomatoes, bell peppers, green onions and thyme and saute for 2 minutes stirring constantly, add the minced garlic and stir well to combine, saute for another 2 minutes, add the mixed vegetables, or carrots and corn and stir well to combine, add 2 tbsp of the liquid, and the dry seasonings , stir well to combine cover and cook for 5 minutes, add the cabbage and the remaining 2 tbsp of liquid, cover and cook on low for about 5 minutes, use a tongue and turn the cabbage slowly, add the butter, cover and cook another 8 minutes, use your tongue and tongue and turn the vegetables again ( by now the cabbage should have cooked down- decide how soft
