Jerk Fried Rice

Ingredients
  

  • 1 ½ cups uncooked rice washed
  • 10 large shrimp
  • 1 8oz pack of imitation crab meat
  • ¼ cup finely chopped tri colour bell peppers
  • 4 garlic cloves minced
  • 1 piece of fresh ginger minced or grated
  • 2 green onions diced
  • 2 ½ cups chicken broth I like to use my homemade as it has cloves, all spice, cinnamon, ginger and star anise
  • 1 tbsp and 1 tsp spicy jerk marinade
  • 3 tsps. salt divided 2 n 1
  • ½ tsp. black pepper
  • 1 ¼ tsp onion powder garlic powder, sazon, smoked paprika lemon pepper seasoning, sazon, all-purpose seasoning, Debbie’s Caribbean Seasoning
  • 2 tbsps. Low sodium soy sauce
  • 2 tsps. Chinese black vinegar or Chaoxiang coking wine optional
  • 3 tbsps. Olive oil divided 1 n1 n 1
  • 1 tbsp butter
  • 1 lemon
  • 1 cup mixed vegetables

Method
 

  1. Peel and deveined shrimp, wash with juice from 1/2lemon and water, rinse. Season with ¼ tsp of all the dry seasonings , ½ tsp black pepper, salt to taste and 1 tsp jerk marinade. Season well, cover and set aside.
  2. To cook your wash rice , in a small stock pot add 1 tbsp olive oil, add the wash rice, add 1 tbsp jerk marinade, stir well to combine, 1 tsp onion powder, garlic powder, sazon, smoked paprika lemon pepper seasoning, sazon, all-purpose seasoning, Debbie’s Caribbean Seasoning , stir well to combine, stir for 2 minutes, add chicken broth and stir, cover and cook. In a large skillet or wok add 1 tbsp olive oil, scrambled eggs and set aside. brown shrimp for 1-2 minutes on each side, remove and set aside . Add remaining 1 tbsp olive oil , brown shrimp 1-2 minutes on each side. Set aside , gallic ginger bell peppers and stir well to combine, add mixed vegetables and stir to combine, add the cooked rice and stir well to combine, add the lemon zest add the butter , soy sauce and black vinegar, stir well to combine, add the eggs, shrimp and imitation crab and stir well, add the juice of ½ lemon. Add green onions for garnish
