Island Pepper Chicken

Ingredients
  

  • 2 large boneless skinless chicken breasts cut in strips
  • ½ tri colour bell peppers sliced
  • 1 medium size onion sliced
  • Garlic cloves minced
  • ½ tsp salt Debbies Caribbean soul spice, sazon, complete seasoning, chicken seasoning, lemon pepper seasoning
  • 1 tsp white pepper smoked paprika, onion powder, garlic powder, chili powder’, cayenne pepper
  • 4 tbsp olive oil divided 3 n1
  • 1 tbsp butter

Method
 

  1. Trim excess fat from chicken , cut into strips 9desired sizes) Wash with lemon juice and water, rinse and pat dry. In a bowl combine all the dry seasonings and mix well to combine. Drizzle 1 tbsp of olive oil and massage into chicken, Pour the dry seasoning mix onto chicken, leaving about 2 tsp behind for later. Season chicken well, cover and let marinade at least 30 minutes. Heat remaining 3 tbsp olive oil and brown chicken pieces for 2-3 minutes on each side, do this in two batches. Set aside. In the same skillet if needed add a pinch more olive oil, add butter , when the butter melts add the vegetables and stir well, add the remaining dry seasoning mix and stir well to combine. Cook for 6 minutes, add the chicken back in and stir well to combine.
