Ingredients

  • Fresh ingredients
  • 1 medium onion quartered
  • 8 –10 green onions chopped
  • 3 tbsp fresh thyme leaves
  • 1 Scotch bonnet pepper optional
  • 10 garlic cloves
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 bunch fresh parsley
  • ½ bunch fresh cilantro
  • 2 celery stalks including leaves
  • 1 tbsp freshly grated ginger
  • 6 –8 fresh basil leaves optional
  • Seasonings and liquids
  • Juice of 1 lemon
  • 1 tbsp fresh lime juice
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tsp salt
  • 2 tbsp olive oil
  • 1 tbsp freshly ground black peppercorns lightly toasted
  • 4 –6 whole pimento berries finely ground

Method

  1. • Wash and thoroughly dry all fresh herbs and vegetables.
  2. • Roughly chop the onion, scallions, peppers, celery, parsley, and cilantro.
  3. • Add the vegetables and herbs to a food processor or blender.
  4. • Add garlic, ginger, lemon juice, lime juice, olive oil, and the dry seasonings.
  5. • Blend until you reach your desired consistency. I recommend a slightly textured blend rather than completely smooth.
  6. • Taste and adjust the salt, citrus, and pepper to your preference.
  7. • Transfer to clean, airtight containers and refrigerate promptly.
  8. Storage: Because this is a fresh, uncooked seasoning, refrigerate at 40°F or below and use within 3–4 days, or freeze immediately insmall portions for longer storage. Lemon juice and salt do not make itshelf-stable.
    FOR A MORE THICKER CONSISTENSY
  Thoroughly dry yourherbs and vegetables after washing. Excess water can make the seasoning watery.
  Use a foodprocessor instead of a blender, if possible. It gives you better control overthe texture without needing extra liquid.
  Keep your olive oilat 2 tablespoons. Start with that amount and only add more if necessary.
  Add the lemon juicegradually. You want brightness without making the mixture too loose.
  Pulse rather thancontinuously blend. Aim for a thick, spoon able paste with tiny flecks of herbsand peppers.
