Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 1 cup peeled and diced potatoes.
  • 1 cup diced carrots.
  • 1 cup diced celery sticks.
  • 3 corns chopped in small pieces
  • 4 garlic clove minced
  • ½ cup diced onion
  • 1 cup diced assorted bell peppers.
  • 1 scotch bonnet pepper
  • 2 vine ripe tomatoes diced
  • 3 stick fresh thyme
  • 2 tsp salt divided 1n1
  • 2 tsp black pepper divided1 n1
  • 2 tsp onion powder divided1 n1
  • 2 tsp garlic powder divided1 n1
  • 2 tsp smoked paprika divided 1n1
  • 1 tbsp and 1 tsp curry powder
  • 2 tsp turmeric powder (divided 1 n 1
  • 2 tsp creole seasoning divided1 n1
  • 2 tsp old bay seasoning divided1n1
  • 2 tbsp butter)
  • 3 tbsp olive oil divided1 n2
  • 1 ½ tsp fresh lemon juice
  • 1/2 cup coconut milk
  • 1 /4 cup water preferably hot

Method
 

  1. Wash and clean shrimp, making sure they are all deveined, pat dry and remove excess water, drizzle 1 tbsp olive oil and massage to coat well, season with 1 tsp of all the dried seasonings and set aside. Heat reaming 2 tbsp olive oil, add remining dry seasonings and stir well for 1 minute, add onions and garlic, and stir well to combine, cook for 1minute, add bell peppers, tomatoes, thyme and stir well to combine, cook for 2 minutes, then add celery, potatoes, corn coconut milk, water and remaining dry seasonings and mix well to combine, cover and cook for 10 minutes, then add seasoned shrimp and cook for 8 minutes, add butter and lemon juice, stir well to combine, let butter melts, turn off the heat and the shrimp will finish cooking.
