- Remove excess fat from ribs, remove w, separate each rib. Clean with water and white vinegar, drain and rinse. Season with all the dry seasoning mix and soy sauce or browning mix and rub well into ribs. Cover and marinade at least 4 hours, overnight if possible.
- Heat oil on medium heat and brown each ribs 3 minutes on each side. Add the ribs back to the pot, add the minced garlic and minced scotch bonnet if you use, and stir well to combine. Add 3 cups of water, cover and cook for 1 hour and 30 minutes. Add onions, bell peppers, tomatoes, and fresh thyme, stir well to combine. Add remaining 1 cup of water, stir well to combine, add ketchup and stir well to combine, cover and cook 30 minutes, then add ketchup, stir well to combine, cover and cook additional 15 minutes.
