Ingredients
  

  • 1/2 lb salmon skin removed, cut into 1-inch cubes
  • 8 jumbo shrimp peeled and deveined
  • 1 tbsp jerk marinade wet marinade like Walkerswood or Grace
  • 4-6 tbsp honey
  • 2 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp lemon pepper
  • 1/4 tsp ground allspice
  • 1/4 tsp ground coriander
  • 1/8 tsp ground fennel seed
  • 1 tbsp olive oil
  • Fresh lime or lemon juice optional, for finishing
  • Chopped scallions or parsley optional garnish

Method
 

  1. Marinate the seafood:
  2. In a bowl, combine jerk marinade, honey, Cajun seasoning, garlic powder, onion powder, paprika, lemon pepper, allspice, coriander, and fennel. Add salmon and shrimp to the mixture and toss to coat. Let marinate for at least 15–20 minutes (or up to 2 hours in the fridge).

  4. Heat olive oil in a skillet over medium heat. Add the salmon and shrimp in a single layer (do this in batches if needed). Sear for 2–3 minutes per side or until caramelized, golden, and fully cooked. Be careful not to overcook the shrimp.
