- Wash and clean shrimp, making sure they are all deveined, pat dry and remove excess water, drizzle 1 tbsp olive oil and massage to coat well, season with 1 tsp of all the dried seasonings and set aside. Heat reaming 2 tbsp olive oil, add remining dry seasonings and stir well for 1 minute, add onions and garlic, and stir well to combine, cook for 1minute, add bell peppers, tomatoes, thyme and stir well to combine, cook for 2 minutes, then add celery, potatoes, corn coconut milk, water and remaining dry seasonings and mix well to combine, cover and cook for 10 minutes, then add seasoned shrimp and cook for 8 minutes, add butter and lemon juice, stir well to combine, let butter melts, turn off the heat and the shrimp will finish cooking.
