Brown Stew Pork Ribs

These Brown Stew Pork Ribs are tender, deeply seasoned, and simmered in a rich, savory gravy infused with fresh thyme, sweet peppers, tomatoes, and island spices. Ingredients
  

  • 1 4lbs. slab pork ribs
  • 1 tbsp green seasoning
  • 1 tbsp mixed dry seasoning ( parsley, oregano, thyme, rosemary and marjoram)
  • 1 tsp dry sage
  • 2 tsp adobe marinade
  • ½ tsp salt
  • 1 tsp black pepper onion powder, garlic powder, smoked paprika, Debbie’s Caribbean soul spice,
  • ½ tsp ground scotch bonnet less or more or ½ scotch bonnet pepper (minced)
  • 4 sprigs fresh thyme
  • ½ red and green pepper sliced
  • 1 tbsp minced garlic
  • 1 large onion sliced
  • 2 Roma tomatoes diced
  • 3 medium size carrots peeled and cut into desired sizes
  • 4 cups water hot
  • 1 tbsp. dark soy sauce ir 2 tsp. Jamaica browning
  • 3 tbsp. avocado oil.
  • 3 tbsp. Kétchup

Method
 

  1. Remove excess fat from ribs, remove w, separate each rib. Clean with water and white vinegar, drain and rinse. Season with all the dry seasoning mix and soy sauce or browning mix and rub well into ribs. Cover and marinade at least 4 hours, overnight if possible.
  2. Heat oil on medium heat and brown each ribs 3 minutes on each side. Add the ribs back to the pot, add the minced garlic and minced scotch bonnet if you use, and stir well to combine. Add 3 cups of water, cover and cook for 1 hour and 30 minutes. Add onions, bell peppers, tomatoes, and fresh thyme, stir well to combine. Add remaining 1 cup of water, stir well to combine, add ketchup and stir well to combine, cover and cook 30 minutes, then add ketchup, stir well to combine, cover and cook additional 15 minutes.
