Seasoned Vegetable Rice

Ingredients
  

  • 2 lbs. uncooked rice basmati preferably ( washed)
  • 12-16 oz. frozen mix vegetabiles thawed
  • 4 cups hot water or broth chicken or vegetable
  • 2 green onions cleaned and smashed
  • 3 sprigs fresh thyme
  • 1 small onion sliced thinly
  • 3 cloves garlic minced(
  • Salt to taste
  • 1 tsp onion powder garlic powder, sazon, all purpose seasoning)
  • 2 tbsp butter
  • 1 tbsp olive oil

Method
 

  1. Heat olive oil and saute minced garlic and onion for 2 minutes. Add thyme and green onions. Saute for another minute, add washed rice butter and all the seasonings, keep stirring for about 3 minutes, making sure the rice is well coated. Add the liquid , cover and cook for 20-25 minutes.
  2. Tip: I like to add a little bit of heat by adding ground scotch bonnet pepper. This rice is great for left overs to make fried rice the next day.
