- Wash and clean drumsticks with water and white vinegar of lemon juice, pat dry. Drizzle 1 tbsp olive oil onto drumsticks and massage well to coat each pieces. Seasoned with all the dry ingredients, including the ground ginger, also 2 tbsp low sodium soy sauce , massage well . Cover and marinade at least 30 minutes. Heat remaining olive oil on medium heat, brown drumsticks for 3 minutes on each side. Set them aside, in the same skillet add the butter, minced garlic and grated ginger, and diced scotch bonnet pepper, stir well to combine cook for 1 minute stirring constantly. Add the remaining soy sauce, rice wine vinegar and honey, stir well to combine, bring to a low oil and simmer for 5 minutes, add the chicken drumsticks in and cover and cook on low simmer for 25 minutes.
