
Caribbean Pepper Chicken

- In a bowl combine all the seasoning ingredients and mix well. Season diced chicken pieces with half of the seasoning mixture, cover and marinade at least 30 minutes. Heat oil on medium heat, brown chicken 3 minutes on each side, do this in two batches, In the meantime in a bowl combine light and dark soy sauce with water sugar and cornstarch and whisk well. set brown chicken aside and in the same skillet add the onion, garlic, ginger and bell pepper and sauté for 2 minutes , add the remaining dry seasoning mix as well, and stir well to combine, add the liquid and mix well to combine add the brown chicken pieces and mix well to combine, cook for 3 minutes stirring constantly.
