Ingredients
  

  • 1 ½ cups uncooked basmati rice washed
  • 1 bunch fresh kale
  • 2 cups hot water or chicken broth
  • 2 tbsp butter
  • 1 tbsp olive oil
  • ¼ of tricolor bell peppers diced
  • ½ onion sliced
  • 2 roma tomatoes diced
  • 3 sprig fresh thyme
  • 4 garlic cloves mined
  • 1 tsp all purpose seasoning onion powder, garlic powder, salt, sazon, ground scotch bonnet pepper

Method
 

  1. Heat olive oil, add onions, an garlic, saute for 3 minutes, add bell peppers and tomatoes, stir well to combine, add the thyme and kale stir well to combine, Cover and cook 8 minutes, constantly stirring, add the butter and all the seasonings and stir well to combine, keep stirring until butter melts, add the washed rice and stir well to combine. Add liquid, water or chicken broth, cover and cook 25 minutes.
