Jamaican Style Brown Stew Snapper

This Jamaican Style Brown Stew Snapper brings the flavors of a Caribbean kitchen to the dinner table. Method
 

  1. 3-4 whole snapper fish, ( scaled and clean with water and lemon juice)
  2. 1 onion (sliced)
  3. 3 cloves garlic( minced)
  4. 2 roma tomatoes( diced)
  5. 2 green onions (smashed and cut into 2)
  6. 4 sprigs fresh thyme
  7. Pinch of ginger (grated)
  8. ½ tri colour bell peppers (sliced)
  9. 1 tsp salt, white pepper, onion powder, garlic powder, smoked paprika, ground scotch bonnet pepper, lemon pepper seasoning, old bay seasoning ,
  10. ½ tsp Debbies Caribbean Soul Spice
  11. 1/8 cup fish and meat sauce ( I will include how to make your own)
  12. 1/3 cup oil for frying
  13. 1/3 cup water, or seafood broth
  14. 2 tbsp butter
  15. 1 lemon sliced
  16. 8 whole all spice berries
  17. In a bowl combine all the dry seasonings and mix well to combine Wash and clean fish, making sure all the scales are removed and inside the fish is all cleaned. Pat dry and make two to three slits (depending on size of the fish) on each sides. Season well, being sure to add some on the insides and rub it in as well as in the slits. Save a least 2 tsp of the seasonings for later. Cover and marinade at least 1 hour. Heat oil and brown each fish for 5 minutes on each sides. Remove and drain oil, leaving about 1 tbsp. Add onions, bell peppers, tomatoes, and cook for 3 minutes, stirring constantly, add the garlic, ginger, all spice berries and thyme and cook for 1 minute stirring , Add the remaining dry seasons and stir well to combine. Add the water or seafood broth and the Jamaican fish and meat sauce , stir to combine, cover and bring to a boil. Add the green onions, butter, layer the fish into the sauce, add lemon slices on top, cover and cook for 15 minutes.
