Ingredients
  

  • 4 large boneless skinless chicken breasts. cut in desired sizes,
  • 1 cup baby carrots or diced regular carrots
  • 1 medium onion sliced
  • ½ green and red bell peppers sliced
  • 2 garlic cloves minced
  • 3 sprigs fresh thyme
  • 1 scotch bonnet pepper with seeds minced
  • 2 sprigs fresh rosemary
  • 1 tsp salt
  • 1 tbsp black pepper
  • 2 tsps. garlic powder
  • 1 tsp creole seasoning
  • 2 tsp sazon seasoning
  • ¼ tsp ground nutmeg
  • 1 tsp paprika
  • 3 tbsp. curry powder. divided 2and1
  • 1 tbsp turmeric powder divided 1n1
  • ½ stick of butter
  • 1 tbsp. olive oil
  • ¾ cup water or low sodium chicken broth

Method
 

  1. Wash and cut chicken, remove any excess fat, if there is any. Season chicken with all dry seasonings, leaving 1 tbsp of curry powder and ½ tbsp turmeric. Cover and marinade at least 30 minutes. Heat olive oil and add garlic and onion, sauté for 2 minutes, add bell peppers and carrots stir well to combine. Cook for 5 minutes stirring constantly, add the liquid, thyme and rosemary stir well to combine, cover and cook for 15-20 minutes. Add the butter and stir well till butter melts
  2. Tip: You can choose to add potatoes as well. Peel and diced 3 potatoes, add at the time yo add the carrots.
