Jamaican Curry Cabbage and Chicken

Ingredients
  

  • 1 whole chicken breasts cut into bit size pieces
  • ½ of a small cabbage chopped
  • 2 regular size carrots peeled and cut into desired sizes
  • 1 cup frozen sweet corn defrosted
  • ½ red and green bell peppers sliced
  • 1 small onion sliced
  • 3 garlic cloves minced
  • 2 sprigs fresh thyme
  • 2 tbsp olive oil divided
  • 2 tbsp butter
  • 1 1/2 tbsp curry powder divided
  • 1 ½ tbsp turmeric powder
  • 1 tsp cumin salt, black pepper, onion powder, garlic powder, lemon pepper, sazon, ground sazon seasoning
  • 1/3 cup water preferably hot

Method
 

  1. Wash chicken breast with water and white vinegar or water and fresh squeeze lemon juice, pat dry and cut in desired sizes. In a bowl combine 1 tbsp curry powder, 1 tbsp turmeric and all the other seasoning mix, mix well to combine. Drizzle 1 tbsp olive oil onto chicken and season with all the seasoning mix, leaving about 2 tsp for later. Cover and marinade for at least 1 hour. Heat remaining 1 tbsp of olive oil, add remaining turmeric and curry powder, stir and cook for 1 minute, then add seasoned chicken, stir and mix well to combine, cook for 5 minutes stirring continuously, add onions and minced garlic and stir well to combine cook for 2 minutes, add carrots, corn and remaining dry seasonings combination mix, add fresh thyme, stir well to combine.
