
Caribbean Air Fryer Fried Chicken w/ Orange Ginger Honey sauce

- Wash chicken in vinegar and water, rinse and drain properly. In a bowl add 1 tsp of all the dry seasoning and mix well to combine, season chicken well making sure to get under the skin. Cover and marinade at least 1 hour. In a bowl add all purpose flour, corn starch, rice flour, baking powder, baking soda and mix well to incorporate, add ½ tsp of the remaining dry mix and again mix well to incorporate. Cover chicken pieces well into flour mixture and set aside on a rack. Preheat Air Fryer on 375 for 6 minutes to get Air Fryer basket hot so the chicken pieces will not stick. Lay chicken pieces on Air fryer basket the thighs skin side down . Air fry on 375 for 35 minutes, flip then cook for another 25 minutes.
- To cook the sauce, in a sauce pan add olive oil, butter, orange slices, ginger slices, thyme leaves and minced garlic, sauté for 2 minutes, add star anise, cinnamon stick, whole cloves, stir well to combine, cook for 1 minute, add honey and water, cook for 6 minutes, add vinegar and cornstarch slurry , stir to incorporate and cook for 2 minutes, stirring constantly.
