After a slow simmer, the pork becomes beautifully tender, with plenty of flavorful gravy to spoon over rice and peas, fluffy white rice, or creamy mashed potatoes. It’s a hearty, satisfying meal for Sunday dinner or any day you have time to let a pot of homemade comfort simmer on the stove.
