Jamaican Style Savoury Bake Chicken

Ingredients
  

  • 1 5lbs. whole chicken (cut up )
  • 1 tbsp spicy jerk marinade
  • 1 tbsp green seasoning
  • 1 tbsp Debbies Caribbean soul spice onion powder, garlic powder, smoked paprika, black pepper, chicken seasoning, all -purpose seasoning, lemon pepper seasoning
  • 2 tsp salt sazon seasoning
  • 1 tbsp dry spice blend combination of dried parsley, dried thyme, dried rosemary, dried marjoram
  • 1 tbsp olive oil
  • ½ stick butter unsalted (melted)
  • 1/8 cup low sodium chicken broth

Method
 

  1. In a bowl add melted butter, olive oil and all the dry seasonings, the jerk marinade and green marinade, mix well to combine.
  2. After you cut up the chicken, wash in water with white vinegar, then rinse and pat dry. Pour all the seasonings over the chicken and using your hands rub well into chicken , being sure to get under skins. Cover and marinade at least hour.
  3. Pre heat oven to 375 , layer chicken pieces in baking dish, pour the chicken broth in baking dish around the chicken, cover and bake for 50 minutes. Remove and base chicken pieces well, uncovered and bake another 30 minutes.
