Ingredients
  

  • 1 lb. large or jumbo shrimps peeled and deveined
  • 6 small russet gold potatoes wash and cut in desired sizes
  • 2 reg size carrots wash peeled and cut in desired sized
  • 1 small onion sliced
  • 3 garlic cloves minced
  • 3 sprigs fresh thyme (can substitute with ½ tsp dried thyme0
  • ½ cup assorted diced bell peppers
  • 1 small piece of ginger minced
  • 1 celery stalk diced optional.
  • 2 corn sliced in about 6 pieces each
  • ½ scotch bonnet pepper or any hot pepper of choice diced with seeds or without
  • 2 tbsp. curry powder
  • 2 tsp turmeric powder
  • ¼ tsp cumin
  • ½ tsp black pepper
  • ¼ tsp salt
  • 1/2 tsp garlic powder
  • ½ tsp. old bay seasoning r
  • ½ tsp onion powder½ tsp lemon pepper
  • 2 tbs butter unsalted
  • 1 tbsp olive oil
  • 1 cup coconut milk or 4 tbsp coconut cream
  • ½ cup liquid (can be water, chicken, seafood, or vegetable broth)
  • 1 tbsp n 1 tsp unsalted butter

Method
 

  1. Wash shrimp, making sure all shells are removed and all the pieces are deveined, set aside. Heat oil, add minced garlic and onions, sauté for 2 minutes, then add ginger, bell peppers and sauté for 1 minute, add all the dry seasoning mix, stir well, and combine, add the onions, carrots, potatoes, celery, scotch bonnet pepper and corn with ½ cup of whatever liquid you choose. Cover and simmer for 10 minutes, stir and combine well, after 10 minutes, add coconut milk, butter ,fresh thyme and shrimp, stir and combine well, layer sliced lemons on top, cover and cook for another 12 minutes.
