- Wash and cut chicken, remove any excess fat, if there is any. Season chicken with all dry seasonings, leaving 1 tbsp of curry powder and ½ tbsp turmeric. Cover and marinade at least 30 minutes. Heat olive oil and add garlic and onion, sauté for 2 minutes, add bell peppers and carrots stir well to combine. Cook for 5 minutes stirring constantly, add the liquid, thyme and rosemary stir well to combine, cover and cook for 15-20 minutes. Add the butter and stir well till butter melts
- Tip: You can choose to add potatoes as well. Peel and diced 3 potatoes, add at the time yo add the carrots.
