Jamaican Style Stew Beef

Ingredients
  

  • 3 lbs. boneless short ribs
  • 1 tbsp green seasoning
  • 1 tbsp onion powder garlic powder, smoked paprika
  • 1 tsp salt black pepper, Debbies Caribbean soul spice, ground scotch bonnet pepper, beef bouillon, ground dry spice blend
  • 5 tbsp olive oil divided 4n 1
  • 1 tbsp tomato paste
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 ½ tbsp tomato paste
  • 1 onion diced largely
  • 4 garlic cloves minced
  • 2 roma tomatoes 9diced)
  • ½ tri colour bell peppers sliced
  • 2 medium carrots cut into desired sizes
  • 1 can butter beans
  • 3 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 tbsp butter
  • 1/8 cup red wine ( I used Jamaican red label wine
  • 1 cup hot water or beef broth

Method
 

  1. Directions wash meat in water with lemon juice, rinse and pat dry. Drizzle 1 tbsp olive oil onto meat, season with all the dry seasoning mix, and the green seasoning, rub seasonings well into meat, cover and marinade at least 1 hour. Heat remaining 4 tbsp olive oil, brown meat for 3 minutes on each side, In the meantime preheat oven n 350 set aside and in the same pan add onions, bell peppers and sauté for 2 minutes. Add th the garlic and tomatoes, stir well to combine and cook for another 2 minutes, stirring constantly, add the red wine and deglaze the pan. Add the thyme, rosemary, oyster sauce, hoisin sauce , tomato paste, stir well to combine, layer the meat in the pot, Pour the beef broth or hot water into the bowl you seasoned the meat in , swoosh it around to get all the seasonings left behind and pour onto the meat.
